You know when you're looking for something sweet to munch on, but you have aesthetic goals, or you're following a specific diet (where are my vegan friends at?) or trying to cut down on sugar... so you push through and skip the treat while feeling downright miserable about it? Yup, well fear no more girl cause I've got you covered!
What if I told you I have a recipe to satisfy every sweet tooth, and it won't ruin your health goals? Welp, babe, get excited cause these brownies tick all the boxes.
My chocolate brownies with peppermint cream cheese icing are not only gluten-free, they're also vegan and packed with protein.
Honestly, you could probably eat one of these bad boys as a post workout snack.
Now, before you turn your nose up at the ingredients, just remember how much healthier these are for you. They're packed with a lot of protein and healthy fats, are grain free and have very little sugar.
On a side note; I'm going to go out on a limb here and say something potentially controversial. I don't think there is anything wrong with dipping your fingers in sugary goodness when you feel like you need it. Everything in moderation is best, right? But, I wanted to give you something that you could have whenever you want, even when you're on a mission to lose body fat. You can't go and eat the whole tray and expect that to be much better, but as a little snack, these are quite perfect.
Back to the topic at hand: Okay... now that I have convinced you to keep reading, I'll drop the bomb. These are black bean brownies. Yes, black beans. I'm sure by now you've heard of these, and if you're like me, you have already given a recipe a try. But these guys are not like the others. They're moist, dense, full of chocolatey flavor, and topped with a creamy, nearly sugar-free cream cheese frosting. Plus, they only require a few ingredients. What could be more simple?
The trick to making these brownies dense and delicious is to make sure you blend the mixture long enough for it to become very smooth. It took me about 5 minutes.
Also, be sure to only bake for 10 minutes. If they need to stiffen up in the center, chill in the refrigerator for a few hours after baking.
